Apples & Yams

I love the way this dish smells when it's cooking. I have served this as a side dish and also made it for breakfast.

Over low heat, add apples to olive oil and cook until tender (about 5 minutes or more). Add honey, cinnamon, vanilla and almonds. Cook another few minutes until the mixture makes its own sauce.

Remove Garnett yams from oven. Cool enough so that you can peel off the skin. Mash the yams and then pour some of the apple mixture on top. Serve warm. Two yams make 2 to three servings of this dish. Increase ingredients according to how many you want to serve.
